Holiday Cookie Sandwiches with Vanilla Bean Frosting

Sometimes you don’t have a lot of time to make a beautiful dessert. This recipe can be completed in under 30 minutes and looks like you spent all day on them! Start by preheating your oven, make your frosting, cool the cookies then assemble away!
